Cakes:
 
Pudding:
For the dough, blend in a food processor
  • 2 cups walnuts,
  • 1 cup raisins.
Chop up
  • 10 dried apricots,
  • 10 dates,
  • a handful of raisins,
and blend for a few seconds (just until mixed) with the dough. Put the mix on a plate and, with your hands, form the pudding. In my family, this cake does not last very long!


Christmas Pudding:
As above, just add a tablespoon of carob and a pinch of nutmeg to the dough mix.



Carrot cake:

Blend, in a food processor,
  • 1 cup of almonds,
  • 1 cup of walnuts,
  • a handful of raisins.
To this, add
  • 2 cups pf carrot pulp, leftover from juicing,
and blend.

Form a loaf, top up with icing made from macademias and raisins blended, for example, and serve. Keep refridgerated.



Or, form a loaf, cut up in slices and dehydrate in a dehydrator.





Carob cake:

To make the crust, process (in a food processor)
  • 2 cups of walnuts,
  • 4 dates,
  • 1/4 cup of raisins, and
  • 4 T of carob.
To make he top layer, process
  • 2 cups of walnuts,
  • 6 dried figs,
  • 1 cup of water, and
  • 4 T of carob.
You may serve it with strawberries.



Cheeze-cake 1:
For the crust, process:
  • 2 cups of walnuts,
  • 3T of carob,
  • 10 dates, and
  • 1/8 cup of raisins.
For the filling, process
  • cottage cheeze (follow the tasty cottage cheeze recipe minus the capsicum, onion and parsley),
  • 10 dates, and
  • 2 T psyllium husk.
Then, add a handful of sultanas and mix.
For the cream, process:
  • 1 cup of cashews/macademias (soaked for 1/2 hour),
  • 3 dates.
  • juice of one lemon, and
  • about 1/4 cup of water (add water gradually until the cream is just right).
Some un-raw friends of mine have liked it, so it must be OK.

Cheeze-cake 2:
For the crust, process:
  • 2 cups of walnuts,
  • 3T of carob,
  • 10 dates, and
  • 1/8 cup of raisins.
For the filling, process
  • 2 cups of macademia nuts,
  • 2 cups of brasil nuts,
  • 20 dates,
  • juice of 1 lemon.
For the top:
  • cut up LOTS of slices of strawberries and decorate.

Apple pie:
(My son loves it!)
Layer 1, process:
  • 1 c walnuts
  • 4 dates
  • 4 dried apricots
Layer 2, process:
  • 6 apples (cored)
  • 4 bananas
  • 5 T psyllium husks
Layer 3 (very optional), process:
  • 1 c almonds
  • 6 dates
  • water, to achieve a spreadable dough
Let it set in the fridge.
Keep leftovers in the fridge.
(I use a large round shallow dish for this pie.)

My favourite birthday cake:
Half a watermelon (with candles, naturally).  :)
