Tasty cottage cheeze:
Process (in a food processor)
  • 2 cups of almonds (soaked overnight, measured before soaking), and
  • 1 cup of rejuvelac.
Add to it
  • sliced red capsicum,
  • sliced small onion, and
  • a bunch of chopped parsley.
Mix well. Put in a glass bowl, cover with a cloth and let it mature for about 24 hours or longer, until slightly sour. You may use as a dip/spread.
